Enchilada Casserole

From Aunt Kitt...
1 lb. cooked ground beef
1 pkg. taco seasoning
Corn tortillas
15 oz can of Enchilada Sauce (red or green)
Shredded Cheese
(You can add whatever you like, tomatoes, green chilies etc.)

Cook ground beef and drain fat. Add taco seasoning and reheat. Shred 6 corn tortillas in sprayed baking dish. Add cooked meat to the top of the tortillas. Add any extra ingredients you want. Pour on can of Enchilada sauce. Sprinkle with cheese and bake 350* for 25 min.

Angel Hair Al Fresco

From Aunt Kitt...
3/4 cup skim milk
1 T. marg. or butter
1 pkg (4.8 ounces) Noodle Roni Angel Hair Pasta with Herbs
1 1/2 cups chopped cooked chicken or 1 can (6 1/8 ounces) white tuna in water, drained, flaked
1 can diced tomatoes
1/3 cup sliced green onions
1/4 cup dry white wine or water
1/4 cup slivered almonds, toasted (optional)
1 T. chopped fresh basil or 1 teaspoon dried basil

In a 3-quart saucepan, combine 1 1/3 cups water, skim milk and marg. Bring just to a boil. Stir in pasta, contents of seasoning packet, tuna, tomatoes, onions, wine, almonds and basil. Return to a boil; reduce heat to medium. Boil, uncovered, stirring frequently, 6 to 8 minutes. Sauce will be thin, but will thicken upon standing. Let stand 3 minutes or until desired consistency. Stir before serving. Serves 4

Chili Macaroni/ Lazy Lasagna

From Kitt (original recipe from Aunt Shannon)
1 lb. hamburger
1 med. green pepper, chopped
1 med onion, chopped
2-3 tsp. chili powder
1 - 16 oz. can tomatoes (undrained)
1 1/4 cup water
1 cup elbow macaroni (cooked)
1 tsp. sugar
1/2 tsp. salt
1/2 cup grated cheese
(Kitt adds a cup or more of cottage cheese)

Start about 35 minutes before serving. Cook macaroni separately. In a large pan, cook hamburger, green pepper, and onion until all juices have evaporated and meat is brown. Stir in chili powder, tomatoes, water, sugar and salt. Let simmer for 15 minutes. Add cooked macaroni, cottage cheese, and cheese. Cover and simmer until cheese is melted, about 2 minutes.

No Peak Beef Stew

Baby Carrots
Celery (chopped)
Onions (diced)
Potatoes (peeled and cubed)
Canned mushrooms
Beef stew meat, cut in small pieces
2 cans of golden mushroom soup

Put the meat at the bottom of a crock pot, add carrots, and a scoop of Golden mushroom soup and salt, add potatoes next, and a scoop of cream of mushroom soup, then the same pattern for the rest of the veggies. Leaving the canned mushrooms to go on the top, with it's juice. Cook in crock pot for at least 8-10 hours on low. DO NOT PEEK, by taking off the lid, the steam helps it cook best.

Rolo Cookies

3/4 cup white sugar
3/4 cup brown sugar
2 eggs
1 tsp. Vanilla
2 cubes butter (soft)
3/4 cup peanut butter
1 tsp. Baking powder
1 tsp. salt
1 tsp. baking powder
2 1/4 cup flour
1-2 bags of Rolos candy (unwrapped)

Mix all wet ingredients. Add dry. Roll a small amount of dough around a rolo. You want to almost be able to see the rolo through the dough.
Bake at 375 degrees for 7 min.

Kneaders Caramel Syrup

  • 1 cup brown sugar
  • 1 cup creme (I asked the worker at Kneaders, and he confirmed that this is heavy whipping cream.)
  • 1 cup light Karo syrup

Blend together and heat on stove top until sugar is smooth. Serve warm.


Kneaders Chunky Cinnamon French Toast

From Jenny...

1 loaf Kneaders Chunky Cinnamon Bread cut in 8 slices (You can substitute this recipe for Cinnamon Swirl Bread - but leave out the raisins. Or you could use any store bought cinnamon swirl bread)

  • 8 eggs
  • 3 cups milk
  • 1 Tablespoon brown sugar
  • 3/4 teaspoon salt
  • 1 Tablespoon vanilla
  • 2 Tablespoons butter

Butter a 9 x 13 glass baking dish generously. Place the bread flat in the baking dish. Mix all remaining ingredients, reserving the butter and pour over the bread. Cut butter into pieces and dot over the top. Refrigerate over night or at least one hour (I think an hour is plenty, and I didn't need all the egg mixture). Bake 45-50 minutes at 350 degrees. Serve with Kneaders Caramel Syrup. Serves 8.


Cinnamon Swirl Bread

1/3 cup powdered milk *see note
1 1/2 heaping Tbsp of instant yeast
3 tsp salt
1/3 cup sugar
3 Tbsp shortening
3 cups warm water
Flour (approx 7.5 cups total)
1 cup raisins

Mix powdered milk, yeast, salt, sugar, and shortening in the bowl of a mixer. Add warm water. Add about 2 to 2.5 cups flour and beat until well mixed. Add flour slowly until dough comes away clean from the edge of the mixing bowl. Add one cup raisins. Allow to knead for 5 more minutes. Do not add too much flour. Cover with greased plastic and allow dough to rise. Once it has doubled in size, divide into 3 parts. Roll out each third of dough into a small rectangle and spray lightly with water (or get hands wet and lightly rub surface of dough - the idea is to barely moisten the dough.) Sprinkle with cinnamon - the amount is up to you but the more the better! Roll up lengthwise, pinching together seam and tucking in the ends to form a log. Place each log into a greased loaf pan and raise until the size of a bread loaf. Bake at 350 degrees for 30 minutes or until golden brown. Makes 3 loaves.

*You can use regular milk instead of powdered. Just omit powdered milk and use 1.5 cups warm milk and 1.5 cups warm water in the place of the 3 cups warm water.

Addiction (AKA Sweet Chex Mix)

From Diane...
2 cups butter
2 cups sugar
2 cups light karo syrup
2 cups slivered almonds
4-5 oz coconut
2 (16 oz) boxes of chex cereal (1 rice, 1 corn)*
*Alternate: You can also do 1/2 box of each chex cereal and 1 box golden grahams instead

Mix together butter, sugar and karo syrup and let come to a boil for about 5 minutes. In large bowl, mix cerals together with coconut and almonds. Pour syrup mixture over cereal mixture. Mix well.

Thai Chicken Pizza

Make your own or buy a pizza crust.
Peanut sauce (I prefer, House of Tsang Bangkok Padang Peanut Sauce)
2 green onions, chopped
1 cup chopped cilantro
1 cup shaved carrot
2 chicken breasts, cooked and cut into bite-sized pieces
Mozzarella cheese

Preheat oven to 420. Spread an even layer of peanut sauce over pizza crust. Add onion, chicken, cilantro and carrot to pizza. Cover with mozzarella and bake for 20-25 minutes. Let pizza sit for a few minutes before slicing.

Tortellini Primavera

1 cup sliced mushrooms
1/2 cup chopped onion
1 garlic clove, pressed
2 TB margarine or butter
1 (10 oz.) pkg. chopped frozen spinace, thawed
8 oz. cream cheese, softened
1 med. tomato
1/4 cup milk
1/4 cup Parmesan cheese
1 tsp. Italian seasoning
salt and pepper
8-9 oz. cheese filled tortellini
3 chicken breasts, cooked and cubed

Cook tortellini according to package instructions. Cook and stir mushrooms, onion and garlic in butter. Add all remaining ingredients. Pour over cooked tortellini.

Pork Chops O'Brien

From Diane...
1 large can French's fried onions
vegetable oil
4-6 pork chops
seasoned salt
1 large or 2 reg. sized cans Cream of Mushroom soup
1/2 cup milk
1/2 cup sour cream
1/4 tsp. pepper
16 oz. dized frozen potatoes (sometimes called O'Brien or Southwest style), thawed
2 cups shredded Cheddar

Preheat oven to 350. In large skillet, heat oil and brown chops. Drain chops and sprinkle with seasoned salt. In large bowl, combine soup, milk, sour cream, pepper and 1/2 tsp seasoned salt. Stir in potatoes, 1/2 cup cheese and 1/2 can onions. Spoon mixture into greased 9X13 baking pan. Lay chops on top. Bake at 350 for 35-40 minutes or until chops are done. Top with cheese and the rest of the onions and bake 5 more minutes.

Calzone

9 frozen Rhodes rolls, thawed but still cold
1 cup diced ham
1 can sliced olives
1/2 cup chopped mushrooms
1/2 cup chopped green peppers
1 cup grated Mozzarella cheese
2 cups heated pizza sauce

Flatten each roll into an 8 inch circle. Combine ham, olives mushrooms, green peppers and cheese. Place 1/4 cup mixture onto each circle. Fold dough over (like a turnover) and seal edges with a fork. Place on baking sheet, sprayed with nonstick cooking spray. Bake at 350 for 20-25 minutes. Dip in heated pizza sauce to eat.

Artichoke Pizza

Pizza Crust: either make your own or buy the Pillsbury one in the refrigerated dough section. Boboli doesn't work very well with this pizza.

Saute in large saucepan:
1 cup sliced pepperoni, chopped in half
3-4 garlic cloves, pressed
When garlic is clear, add:
1 can artichoke hearts, chopped
1 small can sliced black olives
1 red pepper, diced
6 mushrooms, shopped
Layer onto crust:
2 cups shredded mozzarella
entire sauce mixture
2 cups mozzarella

Bake in a preheated 475 degree oven for about 10-12 minutes. So yummy!
(This pizza does not use a sauce, but you won't notice the absence at all)

Garlic Chicken Pasta

From Diane..
16 oz. bow tie pasta
2-3 cloves garlic, crushed
1 cup whipping cream
3 chicken boneless, skinless chicken breasts
1/2 TB pepper
1/2 cup butter
1 lb. bacon, cooked and crumbled
1/2 cup Parmesan cheese
1 (12 oz) bottle Lawry's mesquite marinade with lime juice

Cube and saute the chicken in 1/2 the bottle of the mesquite sauce. (You can let it marinate in it overnight first, but I always forget). Boil pasta. Melt butter, add garlic, cream, pepper, Parmesan cheese and bacon. Whisk together on low heat for 5 minutes. Add remaining marinade. In large pot, add pasta and sauce and heat through.
Holy Cow this is GOOD!! I couldn't find the Lawry's mesquite marinade so I just used KC Masterpiece mesquite marinade and added lime juice. I would use less than 12 oz next time of the marinade. But it was super yummo!

Spinach Roll

12 Rhodes rolls, thawed and raised
1 (8 oz.) pkg. cream cheese, softened
3 cups fresh or frozen spinach, chopped
1/2 tsp. basil
1/2 tsp. rosemary
1 egg
1/4 cup Parmesan cheese
2 cups ham, chopped
1 cup fresh mushrooms, sliced
1/2 cup onion, chopped
1 clove garlic, minced
2 TB butter
1/4 tsp. pepper
1/4 tsp. salt

Roll dough into a 10X13 inch rectangle on a greased cookie sheet. Combine cream cheese, spinach, basil, rosemary, egg, cheese, and ham, then spread down the middle of the dough. Saute mushrooms, onion, garlic, butter, salt and pepper until vegetables are softened. Layer over cream cheese mixture. Roll both sides up, overlapping each other. Cut 4 (1 inch) slits on the top of the roll. Baste the top of the roll with a beaten egg, sprinkle Parmesan cheese on top. Bake at 350 for 45 minutes. Cover with foil for the last 15 minutes so the roll doesn't get too brown.

Thai Cheesy Chicken Hors d'oeuvres

-2 boneless chicken breasts
-1/4 cup soy sauce
-1 tsp. ground fresh ginger
-1 garlic clove, crushed
-4-8 medium flour tortillas
-8 oz. Monterey Jack cheese, shredded
-1/2 cup red onion, diced fine
-1/2 bunch cilantro leaves, diced
-Thai peanut sauce (do not use peanut safay sauce)

Marinate chicken for several hours in soy sauce, ginger and garlic. Grill chicken until cooked through. On one flour tortilla sprinkle shredded cheese, onion, cilantro and chicken. Cover with second tortilla. Place on baking sheet. Repeat steps to make more tortilla "sandwiches." Final number of sandwiches will depend on how sparingly ingredients are used. I can usually get 4 sandwiches.
When they are all made, bake in a preheated 350 degree oven for 8-10 minutes. Cut to make into triangles. Drizzle the tops with peanut sauce. Serve hot.

Chicken Almondine

6 chicken breasts, cooked and chopped or shredded
1 package Spanish Rice mix
2 regular or 1 large can Cream of Chicken Soup, undiluted
4 tsp. lemon juice
1 cup mayonaise
1 cup slivered almonds

Make rice mixture according to package instructions but do not add stewed tomatoes. Add chicken to rice mixture. Mix remaining ingredients together and add to the rice mixture (reserving a few almonds to sprinkle over the top). Put in greased 9X13 pan. Dust with paprika and almonds over the top. Bake at 350 degrees for 45 minutes.

Muffin Pizza

From Elle...
English Muffins
Pepperoni, canadian bacon, pineapple, (or whatever your fav toppings are)
Pizza sauce
Mozzarella cheese (or cheddar/mozz mix)

Open up English Muffins and spread pizza sauce on. Top with your favorite pizza toppings and cheese. Place on a baking pan. Then pop them in the oven on broil to warm them and melt the cheese.

Crock Pot Pork Chops

From April...
4-6 pork chops (sprinkled with seasoning salt)

Sauce:
1/2 cup br. sugar
1/2 cup ketchup
1 tsp ground ginger
1/2 cup soy sauce
2 garlic cloves
a spoonful of honey

Mix sauce and pour on top of chops in crock pot - cook 4-6 hrs on low. Serve with rice.

Chicken Rolls

2 pkgs Pillsbury Crescent Rolls

1 can chicken (or you can cook and shred your own)

1 pkg cream cheese

salt and pepper

Anything else that seems good. (Diced green chilies, sundried tomatoes, chopped kalmata olives, etc.)


Mix chicken, cream cheese and salt and pepper and anything else you want to add until well blended. Roll out crescent rolls and separate. Place about a two tablespoons of chicken mixture in the center of each crescent. Roll the dough around the chicken trying to seal it closed. Place on grease cookie sheet and bake according to instructions on roll package. Eat.

Spaghetti Pie

Spaghetti or Angel Hair Pasta (1 pkg)

3 Eggs

1-2 cups Parmesan Cheese

1 small onion

1 lb Hamburger

1 jar of your favorite red sauce

Other yummy things like marinated artichoke hearts or olives

Cheese (sliced or shredded)


Crust

Cook the pasta. Beat the eggs and Parmesan in a separate bowl - when you are done it resembles a paste. Drain the pasta and return to the pot. Add the egg/cheese mixture to the noodles while they are still hot (the hot pasta cooks the egg a little). This pasta mixture serves as the "crust" of your pie. Divide the noodles in half and put each half into a pre-greased glass pie pan. Using a spoon press the noodles into the bottom and sides of the pan leaving an area in the middle for the pie filling.


Filling

Dice and saute the onion until soft. Add the hamburger and brown - pour out grease. Add the sauce and other additions, stir and allow to simmer (I usually do this while the pasta is cooking). Spoon the meat mixture into the pasta pie crusts. Top with cheese (my family likes cheese so much we also add shredded cheese to the meat mixture). Bake the entire thing at 350 degrees until the cheese is bubbly. FYI: This recipe freezes really well. I usually make two pies and freeze one for later.

French Onion Soup

(I like to make this one when I have leftover French bread that is a little too hard)


Lipton Onion Soup Mix

French Bread (a day or two old is best)

Cheese (Swiss is the standard but I have used all kinds, sliced or shredded based on what's in the fridge)


Make the soup following the recipe on the box. Pour soup into oven safe bowls. Put slices or chunks of bread on top of soup (chunks are good for kids). Put cheese on top of bread - slices work best. Broil the entire bowl until the cheese bubbles. Eat.

Thai Chicken and Coconut Soup with Noodles

1 1/2 tablespoon(s) cooking oil
1 small onion, chopped
4 cloves garlic, minced
1 1/2 teaspoon(s) ground coriander
1/2 teaspoon(s) ground ginger
1/4 teaspoon(s) fresh-ground black pepper
1/8 teaspoon(s) cayenne
1 quart(s) canned low-sodium chicken broth or homemade stock
2 cup(s) canned unsweetened coconut milk
5 teaspoon(s) Asian fish sauce or soy sauce
1 3/4 teaspoon(s) salt
2 strip(s) (3-inch-long) lime zest
1/2 pound(s) egg fettuccine
1 pound(s) boneless, skinless chicken breasts (about 3), cut into 14-inch slices
2 tablespoon(s) lime juice
3 tablespoon(s) chopped cilantro (optional)
chopped carrots (optional)

In a large pot, heat the cooking oil over moderately low heat. Add the onion and cook, stirring occasionally, until it is translucent, about 5 minutes. Add the garlic, coriander, ginger, black pepper and cayenne; cook, stirring, for 30 seconds. Add the broth, coconut milk, fish sauce, salt and lime zest. Bring to a simmer, stirring occasionally. Reduce the heat and simmer, partially covered, for 10 minutes. Meanwhile, in a large pot of boiling, salted water, cook the fettuccine until just done, about 12 minutes. Drain. Add the chicken to the soup and simmer until just done, about 1 1/2 minutes. Remove the pot from the heat and stir in the fettuccine, lime juice and cilantro, if using. Serve the soup in bowls with a fork and spoon. Serves 4.
This recipe is right down my alley. I love Thai food, and this soup hits the spot!!

Creamy Italian Chicken

3 boneless chicken breasts
1 pkg of Italian Salad Dressing Mix
1 can cream of chicken soup
1 can cheddar cheese soup

Place chicken breasts in crockpot, sprinkle Italian Salad Dressing Mix over chicken, add cream of chicken and cheddar cheese soup. Cook on low for 5-6 hrs.

Vegetable Casserole

2 large potatoes, thinly sliced
shredded carrots
1 lb ground beef, browned and grease drained

Layer in 9 x 13 in glass baking pan in order given

Heat: 2 cans cream of chicken soup, 1 can milk, 1 1/2 tsp salt, 3 Tbsp dried onions
Pour over layers. Cover with tin foil and bake for 1 1/2 hrs at 350 degrees. Remove foil, then top with 2 cans of green beans (drained) and 1 to 2 cups of grated cheddar cheese. Bake 15 more minutes.

Taco Soup

1 lb lean ground beef
1/2 pkg taco seasoning
2 c Water
1- 8 oz can tomato sauce
1 can corn undrained
1 can kidney beans undrained
1 can chilli beans
1 small can green chilies
Topping: Frito Chips, Sour Cream, and Grated Cheddar Cheese

In a large saucepan, cook the ground beef, then drain off the grease, and then stir in taco seasoning. Mix in the remaining ingredients EXCEPT for the toppings. Bring soup to a boil, reduce the heat, cover, and simmer for 15 minutes. Top each serving of soup with frito chips, sour cream, and grated cheese.

Calzones

Rhodes Frozen Roll Dough
Ragu Pizza Sauce
Cheese
Misc Toppings (pepperoni, canadian bacon, pineapple, olives, ect...)

Take Rhodes frozen roll dough (2 rolls will make a good size calzone)--rise as many rolls as you want and place on cookie sheet to let rise. Roll out dough. On one half of rolled dough spread pizza sauce, cheese, and then pizza toppings. Fold over top half onto bottom half. Pinch together edges. Bake at 350 degrees for 30 minutes.
